After falling in love with New Orleans and beignets on a first-time trip to The Big Easy, Mark and Faith Lansdon’s idea for Voodoo Café Food Truck was born. Originally, they planned to only sell authentic international coffees, but the Lansdon’s realized coffee sales alone wouldn’t be enough to keep them afloat. Beignets gave them the boost they needed. “Mark and my mother worked on the beignet recipe, which took a year to perfect,” Faith says. “I thought it would be funny if they were in the shape of voodoo dolls. It stuck and is now part of our brand.”
So, of the 10 varieties, which beignet reigns supreme? The Sweet Juju, named after their neighbor’s daughter. In an hours-long process, the yeast dough rises first. Next, the dough is hand cut into its signature voodoo doll shape and dropped in the fryer. Finally, the beignet is drizzled with dulce de leche, or thick, creamy Mexican caramel, and dusted with cinnamon.
Lansdon suggests pairing the decadent creation with the truck’s other best seller, the sweet and creamy Vietnamese iced coffee. “The condensed milk gives it a hint of caramel flavor,” Faith says. “Even non-coffee drinkers love it.”
